Coconut Snowball Energy Bites
Give these snowball inspired energy bites a try on your next snow day! These yummy treats will keep you full through all of the sledding, snowball fights and snowman building!
All You Need!
- 2 cups pitted medjool dates
- 1 cup shredded coconut
- ⅓ cup cocoa powder
- ½ cup almonds
- 1 tablespoon Hy-Vee coconut oil
- 1 teaspoon vanilla extract
Things to Grab!
- Food Processor
- Tablespoon
- Measuring cups
- Measuring spoons
All You Do!
- Pulse almonds in a food processor until roughly chopped.
- Add the rest of the ingredient to food processor and pulse until fully combined.
- Use a tablespoon to scoop out mixture then roll into balls.
- Coat each ball in shredded coconut.
